Celebrating the iconic culinary gatherings and heartfelt conversations that sparked a gastronomic revolution, this project brings together foundational voices like Pedro Subijana, Tatus Fombellida, and Ramón Roteta alongside pioneering talents who arrived later, including Elena Arzak, Hilario Arbelaitz, and Martín Berasategui. Gathered around a single dining space, these culinary leaders trade memories, craft an intimate first-person narrative, and share authentic reflections, featuring standout commentary from Andoni Luis Aduriz. At the same time, a rising cohort of male and female chefs is reimagining hallmark recipes from the New Basque Cuisine movement, transforming historic plates into modern gastronomic experiences while honoring the movement’s original creative spark.
